Twice Baked Sweet Potatoes

Ingredients

  • 6 large sweet potatoes baked
  • 14 c Parkay margarine melted
  • 12 tsp cinnamon
  • 12 tsp salt
  • 14 tsp ground nutmeg
  • 3 c miniature marshmallows
  • 1 8 oz can crushed pineapple drained
  • 1 c chopped walnuts

Directions

  1. Preheat oven to 350
  2. Cut each potatoes in half lengthwise Scoop out centers leaving 18-inch shell
  3. Mix potatoes 2 tablespoons margarine cinnamon salt and nutmeg with an electric mixer until smooth
  4. Stir in 2 cups marshmallows pineapple and 12 cup marshmallows and walnuts spoon into shells
  5. Toss remaining margarine marshmallows and walnuts sprinkle on top of potatoes Bake 20 minutes
  6. Makes 12 servings
