Twice Baked Sweet Potatoes
Ingredients
- 6 large sweet potatoes baked
- 14 c Parkay margarine melted
- 12 tsp cinnamon
- 12 tsp salt
- 14 tsp ground nutmeg
- 3 c miniature marshmallows
- 1 8 oz can crushed pineapple drained
- 1 c chopped walnuts
Directions
- Preheat oven to 350
- Cut each potatoes in half lengthwise Scoop out centers leaving 18-inch shell
- Mix potatoes 2 tablespoons margarine cinnamon salt and nutmeg with an electric mixer until smooth
- Stir in 2 cups marshmallows pineapple and 12 cup marshmallows and walnuts spoon into shells
- Toss remaining margarine marshmallows and walnuts sprinkle on top of potatoes Bake 20 minutes
- Makes 12 servings
