Vanilla Rice Pudding

Ingredients
- 4 c 2 low-fat milk
- 1 egg well beaten
- 1 small box Jell-O vanilla pudding not instant
- 1 c Minute brand instant rice
- 14 c raisins
- 14 tsp ground cinnamon
- 18 tsp ground nutmeg
Directions
- Gradually stir milk and egg into dry pudding mix in saucepan add rice and raisins
- Stir over medium heat until mixture comes to boil
- Remove from heat cover for 5 minutes then cool for 5 minutes stirring twice
- Pour into dessert dishes or serving bowl Cover with plastic wrap and refrigerate about 1 hour
- Serve with sprinkled cinnamon and nutmeg
- Makes 10 servings
- Can be doubled
