Veal Scallopini
Ingredients
- 2 lb veal thin cut
- 1 pkg fresh mushrooms sliced
- 2 Tbsp capers
- 1 jar artichoke hearts pickled in jar
- 2 pkg green onions sliced or chop all
- 1 12 c red cooking wine
- dash of Worcestershire
Directions
- Cut veal into strips two fingers wide
- Rinse strips to moisten
- Dip in bread crumbs and brown medium
- Pour off excess fat
- Saute green onions and mushrooms until clear
- Add browned meat wine and Worcestershire simmer until vegetables reach desired stage
- Serve with rice
- Serves 4 to 6
