Veal Scallopini

Ingredients

  • 2 lb veal thin cut
  • 1 pkg fresh mushrooms sliced
  • 2 Tbsp capers
  • 1 jar artichoke hearts pickled in jar
  • 2 pkg green onions sliced or chop all
  • 1 12 c red cooking wine
  • dash of Worcestershire

Directions

  1. Cut veal into strips two fingers wide
  2. Rinse strips to moisten
  3. Dip in bread crumbs and brown medium
  4. Pour off excess fat
  5. Saute green onions and mushrooms until clear
  6. Add browned meat wine and Worcestershire simmer until vegetables reach desired stage
  7. Serve with rice
  8. Serves 4 to 6
