Vegetable-Beef Spaghetti Sauce

Ingredients

  • 34 lb lean ground beef
  • 2 c sliced fresh mushrooms
  • 1 onion chopped
  • 12 c chopped bell pepper
  • 12 c thinly sliced carrots
  • 2 cloves garlic minced
  • 1 28 oz can tomatoes cut up
  • 1 8 oz can tomato sauce
  • 12 c thinly sliced zucchini
  • 1 tsp dried basil
  • 12 tsp oregano
  • 8 oz spaghetti
  • 1 Tbsp cornstarch
  • 1 Tbsp cold water

Directions

  1. In a large saucepan cook beef mushrooms onion bell pepper carrots and garlic until meat is brown and vegetables are tender Drain off fat
  2. Stir in undrained tomatoes tomato sauce zucchini basil and oregano
  3. Bring to boiling reduce heat and simmer uncovered for 10 minutes
