Vegetable-Cheese Bake
Ingredients
- 2 10 oz each pkg frozen vegetables
- 12 c boiling water
- 14 c butter or margarine
- 14 c all-purpose flour
- 1 12 c milk scalded
- 12 c grated Cheddar cheese
- 34 tsp salt
- 14 tsp black pepper
- 12 c chopped green onion
- 14 c sliced pimento
Directions
- In a saucepan combine frozen vegetables and boiling water Bring to boil again
- Cover and simmer 5 minutes
- Drain well Melt the butter in a saucepan
- Blend in flour
- Cook 1 minute Gradually stir in milk
- Simmer stirring until smooth and thickened
- Add cheese and seasonings
- Mix in vegetables onions and pimentos
- Spread into buttered 1-quart casserole
- Bake at 350 for 30 minutes or until bubbly and browned
