Vegetable-Cheese Bake

Ingredients

  • 2 10 oz each pkg frozen vegetables
  • 12 c boiling water
  • 14 c butter or margarine
  • 14 c all-purpose flour
  • 1 12 c milk scalded
  • 12 c grated Cheddar cheese
  • 34 tsp salt
  • 14 tsp black pepper
  • 12 c chopped green onion
  • 14 c sliced pimento

Directions

  1. In a saucepan combine frozen vegetables and boiling water Bring to boil again
  2. Cover and simmer 5 minutes
  3. Drain well Melt the butter in a saucepan
  4. Blend in flour
  5. Cook 1 minute Gradually stir in milk
  6. Simmer stirring until smooth and thickened
  7. Add cheese and seasonings
  8. Mix in vegetables onions and pimentos
  9. Spread into buttered 1-quart casserole
  10. Bake at 350 for 30 minutes or until bubbly and browned
