Vegetable-Lentil Chowder

Ingredients
- 1 12 c lentils washed
- 1 qt water
- 2 12 tsp salt
- 34 c chopped onion
- 23 c chopped green pepper
- 13 c butter or margarine
- 12 c chopped pimentos
- 1 1 lb 14 oz can tomatoes
- 14 tsp pepper
Directions
- Combine lentils water and salt in large saucepan
- Cook covered over medium heat for 30 minutes
- Cook onion and green pepper until tender
- Combine all ingredients
- Simmer covered for 30 minutes
- Makes 6 large servings
