Vegetable Couscous

Ingredients
- 2 c chopped tomatoes about 2 large
- 1 15 oz can garbanzo beans
- 12 c chopped red bell pepper
- 12 c chopped green onions
- 1 Tbsp chopped fresh oregano
- 1 tsp paprika
- 1 tsp olive oil or vegetable oil
- 5 c hot cooked couscous
- 14 c grated Parmesan cheese
Directions
- Heat all ingredients except couscous and cheese to boiling in a 2-quart saucepan
- Serve over couscous
- Sprinkle with cheese Makes 6 servings
