Vegetable Couscous

Ingredients

  • 2 c chopped tomatoes about 2 large
  • 1 15 oz can garbanzo beans
  • 12 c chopped red bell pepper
  • 12 c chopped green onions
  • 1 Tbsp chopped fresh oregano
  • 1 tsp paprika
  • 1 tsp olive oil or vegetable oil
  • 5 c hot cooked couscous
  • 14 c grated Parmesan cheese

Directions

  1. Heat all ingredients except couscous and cheese to boiling in a 2-quart saucepan
  2. Serve over couscous
  3. Sprinkle with cheese Makes 6 servings
