Vegetable Medley
Ingredients
- 1 medium onion
- 3 medium green or red peppers
- 3 medium potatoes
- 2 medium tomatoes chopped
- 1 eggplant chopped
- 1 large zucchini sliced
- 3 Tbsp olive oil
- 1 tsp dried basil leaves
- 12 tsp pepper
- 1 tsp salt
- olives optional
- Parmesan cheese optional
Directions
- Cook and stir onion in oil using 10-inch skillet until tender
- Add all ingredients except tomatoes
- Cook and cover over low heat for 10 minutes stirring occasionally
- Add tomatoes Cover and simmer until green pepper is tender approximately 5 minutes
