Vegetable Potato Soup
Ingredients
- 2 c diced potatoes
- 1 c boiling water
- 1 tsp salt
- 2 c milk
- 34 c sliced beans fresh
- 12 c carrots sliced
- 12 c celery sliced
- 12 c onions sliced
- 1 c hot beef broth dissolve 1 beef cube in 1 c hot water
- 1 tsp salt
- 14 tsp pepper
- 2 Tbsp melted butter
Directions
- Cook first 3 ingredients in covered saucepan until tender Mash until fluffy
- Add milk mix well
- Cook remaining vegetables and salt in beef broth in covered saucepan until tender about 15 minutes
- Blend with potato mixture
- Stir in black pepper and butter
- Serve hot
