Vegetable Quiche
Ingredients
- 1 12 c cooked rice at room temperature
- 34 c egg substitute divided real egg may be used
- 34 c shredded low-fat Mozzarella cheese divided
- 1 12 c chopped fresh broccoli
- 34 c sliced fresh mushrooms
- 14 c skim milk
- 1 Tbsp margarine melted
Directions
- In a bowl combine rice 14 cup egg substitute and half of the cheese mix well
- Pat into the bottom and up the sides of a 9-inch pie plate coated with nonstick cooking spray
- Set aside
