Vegetable SoupHeart Smart
Ingredients
- 1 Tbsp vegetable oil
- 12 c chopped onion
- 2 garlic cloves minced
- 1 16 oz can tomatoes in juice chopped
- 1 c low sodium chicken broth
- 1 c sliced carrots about 2 medium
- 1 c sliced celery
- 14 c chopped fresh parsley
- 1 tsp basil crushed
- 14 tsp salt
- 18 tsp pepper
- 1 c frozen lima beans
- 12 c water
Directions
- In medium saucepan over medium-high heat in hot oil cook onion and garlic about 3 minutes or until soft stirring frequently
- Add tomatoes in juice chicken broth carrots celery parsley basil salt and pepper and bring to a boil Reduce heat cover
- Simmer about 20 minutes
- Add lima beans and water bring to a boil
- Reduce heat
- Cover
- Simmer about 20 minutes or until beans are tender
- Makes 6 servings about 34 cup each
