Veggie Potato Melt
Ingredients
- 4 large baking potatoes
- 1 c sliced mushrooms
- 12 c zucchini julienne cut
- 12 c chopped red pepper
- 14 c thinly sliced red onion
- 1 tsp dried basil leaves
Directions
- Pierce potatoes place on a paper towel
- Microwave until tender
- Let stand 5 minutes
- Combine other ingredients and microwave on High until tender 2 to 3 minutes
- Split potatoes and fill with vegetable mixture
- You may top with cheese or butter
- Microwave another 30 seconds to melt the topping
