Velvety Chicken Pate

Ingredients

  • 14 c butter
  • 12 lb chicken livers halved
  • 1 yellow onion chopped
  • 1 tart apple chopped
  • 2 Tbsp brandy
  • 2 Tbsp whipping cream
  • 14 c butter room temperature
  • salt and pepper to taste

Directions

  1. In medium skillet saute butter and chicken livers for 2 minutes
  2. Add onion and apple and stir for 5 minutes until apple softens
  3. Stir in brandy and cream
  4. Transfer mixture to blender and blend 2 to 3 minutes or until smooth
  5. Refrigerate this mixture for 1 hour
