Venison Roast With Wine Gravy

Ingredients
- 1 5 to 6 lb venison roast
- 3 c dry white wine
- 1 large onion thinly sliced
- 12 black peppercorns
- 12 whole cloves
- 6 whole allspice
- 1 bay leaf
- 14 tsp salt
- 3 Tbsp all-purpose flour
- 14 c water
Directions
- Remove any white membrane surrounding roast
- Place roast in a shallow dish
- Combine wine onion and seasonings pour over roast Cover and marinate 8 hours in refrigerator turning meat occasionally
