Ingredients

  • 1 5 to 6 lb venison roast
  • 3 c dry white wine
  • 1 large onion thinly sliced
  • 12 black peppercorns
  • 12 whole cloves
  • 6 whole allspice
  • 1 bay leaf
  • 14 tsp salt
  • 3 Tbsp all-purpose flour
  • 14 c water

Directions

  1. Remove any white membrane surrounding roast
  2. Place roast in a shallow dish
  3. Combine wine onion and seasonings pour over roast Cover and marinate 8 hours in refrigerator turning meat occasionally
