Vichysquash

Ingredients
- 1 medium onion
- 2 Tbsp butter
- 34 c chicken broth
- salt to taste
- 6 medium summer squash zucchini is wonderful
- 1 c light cream or half and half
- chopped chives
Directions
- Saute onion in butter until clear
- Add broth and cut up squash cook until tender
- Puree squash when cool season and add cream when cold
- Sprinkle top with chives
- Can be served hot or cold
