Vidalia Onion Seafood Casserole

Ingredients

  • 1 lb frozen peeled popcorn shrimp
  • 8 oz cream cheese
  • 2 oz jar chopped pimento
  • 1 c chopped celery
  • 12 c milk
  • 1 can cream of celery soup
  • crushed cracker crumbs Ritz or Georgia
  • 2 Tbsp margarine
  • 1 c cooked rice yellow
  • 12 c chopped green pepper
  • 2 c chopped Vidalia onions

Directions

  1. Saute onions celery and green pepper in margarine
  2. Add pimento cream of celery soup milk and cream cheese
  3. Heat slowly until blended
  4. Add rice and shrimp mix well
  5. Bake at 350 for 30 minutes
  6. Place crushed crackers on top the last 10 minutes of baking
  7. Cover top of casserole with crumbs
