Vinegar Pie

Ingredients

  • 1 c sugar
  • 2 Tbsp flour
  • 2 Tbsp cider vinegar
  • 2 eggs beaten
  • 1 Tbsp butter
  • 12 tsp lemon extract
  • sweetened whipped cream

Directions

  1. Bake pie shell cool
  2. Mix sugar and flour in 2-quart saucepan Add enough water to vinegar to measure 1 cup
  3. Blend into eggs Stir egg mixture gradually into sugar mixture
  4. Cook over medium heat stirring constantly until mixture thickens and boils
  5. Boil and stir 1 minute
  6. Remove from heat stir in butter and lemon extract
  7. Cool slightly
  8. Pour into pie shell refrigerate
  9. Serve with whipped cream
