Violet Jelly
Ingredients
- violets
- boiling water
- 1 lemon
- 1 pkg Sure-Jell
- 4 c sugar
Directions
- Fill any size glass jar with violet blossoms
- Cover with boiling water
- Put lid on jar and let blossoms infuse for 24 hours
- The next day open the jar and strain the blue infusion discarding the spent violets
- Measure out 2 cups of the infusion and add the juice of 1 lemon and 1 package of Sure-Jell
- Bring just to a boil and immediately add sugar
- Bring back to a boil and boil hard for 1 minute
- Pour into hot sterilized jars or glasses and seal
