VivianS Pumpkin Roll
Ingredients
- 3 eggs
- 1 c sugar
- 34 c flour
- 23 c pumpkin
- 12 tsp nutmeg
- 12 tsp ginger
- 1 tsp baking soda
- 1 c pecans optional
Directions
- Mix all ingredients
- Pour into a well-greased sheet cake pan Bake at 375 for 20 minutes
- Remove cake from pan onto a tea towel covered with powdered sugar
- Roll up towel and cake together
- Put in freezer for 30 minutes
- While cake is cooling make the filling
