Washington Favorite Senate Bean Soup
Ingredients
- 2 c 16 oz Great Northern beans
- 2 or more qt water
- 1 meaty ham bone
- 1 c diced onion
- 1 c diced potato
- 1 c chopped celery
- 1 clove minced garlic
Directions
- Put beans in a large pot
- Add the 2 or better quarts of water and soak overnight
- Next day drain the beans and add more water more than cover
- Add the ham bone to the beans and water cover and simmer for 2 hours
- Remove the ham bone from pot and chop the meat and return it to the pot
- Then add onion potato celery and garlic
- Season to taste with salt and pepper
- Be sure there is enough water cook for another hour
