Water Chestnut Chicken

Ingredients
- 2 green peppers cored and thinly sliced
- 2 carrots peeled and thinly sliced
- 1 lb chicken breasts boned skinned and sliced
- 1 bunch green onions chopped
- 1 can sliced water chestnuts
- 14 tsp ginger
- 18 tsp salt
- 3 Tbsp cornstarch
- 3 Tbsp soy sauce
Directions
- Stir-fry green peppers and carrots until tender
- I use a little sesame oil for flavor
- Remove from pan
- Stir-fry chicken After done add peppers and carrots to chicken
- Stir in green onions and water chestnuts
- Combine ginger cornstarch salt and soy sauce and pour over chicken and vegetables
- Stir quickly until heated and serve over rice
