Watermelon Rind Pickles

Ingredients
- melon with thick rind
- 1 gal water
- 2 heaping Tbsp lime
- 2 or more tsp ginger
- boiling water
- 2 c vinegar
- 4 c sugar
- 1 Tbsp spice
- 1 Tbsp cloves
- 4 sticks cinnamon
Directions
- Make solution of water and lime dissolved in it
- Let stand overnight
- Next morning take out and wash in clear water Prepare a ginger tea
- Cook rind until it begins to look clear Prepare syrup
- Drop rind in the syrup having enough to cover rind well
- Boil until rind becomes a pretty amber color
- Fill jars and seal
