Watermelon Rind Pickles

Ingredients

  • melon with thick rind
  • 1 gal water
  • 2 heaping Tbsp lime
  • 2 or more tsp ginger
  • boiling water
  • 2 c vinegar
  • 4 c sugar
  • 1 Tbsp spice
  • 1 Tbsp cloves
  • 4 sticks cinnamon

Directions

  1. Make solution of water and lime dissolved in it
  2. Let stand overnight
  3. Next morning take out and wash in clear water Prepare a ginger tea
  4. Cook rind until it begins to look clear Prepare syrup
  5. Drop rind in the syrup having enough to cover rind well
  6. Boil until rind becomes a pretty amber color
  7. Fill jars and seal
