Watermelon Rind Preserves

Ingredients
- 6 c cubed watermelon rind
- 1 lemon
- 2 c sugar
- 12 c fruit pectin
- few drops red food coloring
Directions
- Clean rind by removing red meat and green outer part of rind Cut rind and lemon into small pieces
- Mix fruit and sugar let set overnight
- Cook mixture for about 1 hour until thickened Remove mixture from heat
- Add 12 cup pectin and enough food coloring to give an attractive color
- Seal preserves in jars
