Weight Watcher Stuffed Peppers

Ingredients

  • 4 tsp oil
  • 1 c diced celery
  • 1 large diced onion
  • 2 c cooked brown rice
  • 16 oz 93 fat-free ground turkey
  • 2 heaping tsp instant beef bouillon
  • 2 Tbsp Worcestershire sauce
  • 34 c V-8 picante
  • 12 tsp spicy pepper
  • 12 tsp salt-free garlic and herb
  • 4 large green peppers
  • 8 tomato slices
  • 8 tsp grated Cheddar

Directions

  1. Saute ground turkey onion and celery in oil in nonstick frypans sprayed with Pam
  2. Add cooked rice spices bouillon V-8 and Worcestershire
  3. Mix well
  4. Spoon into pepper halves
  5. Garnish with a tomato slice and 1 teaspoon grated cheese
  6. Bake at 350 covered 1 hour
  7. Four servings 2 halves each equals 4 protein and 1 bread
