Weight Watcher Stuffed Peppers
Ingredients
- 4 tsp oil
- 1 c diced celery
- 1 large diced onion
- 2 c cooked brown rice
- 16 oz 93 fat-free ground turkey
- 2 heaping tsp instant beef bouillon
- 2 Tbsp Worcestershire sauce
- 34 c V-8 picante
- 12 tsp spicy pepper
- 12 tsp salt-free garlic and herb
- 4 large green peppers
- 8 tomato slices
- 8 tsp grated Cheddar
Directions
- Saute ground turkey onion and celery in oil in nonstick frypans sprayed with Pam
- Add cooked rice spices bouillon V-8 and Worcestershire
- Mix well
- Spoon into pepper halves
- Garnish with a tomato slice and 1 teaspoon grated cheese
- Bake at 350 covered 1 hour
- Four servings 2 halves each equals 4 protein and 1 bread
