Weight Watchers Bran Muffins
Ingredients
- 2 c boiling water
- 2 c all-bran cereal
- 1 qt buttermilk
- 4 c bran flakes
- 3 c raisins
- 1 c vegetable oil
- 3 c white sugar
- 12 c brown sugar substitute
- 4 eggs
- 5 c flour
- 3 Tbsp baking soda
- 1 Tbsp salt
- 1 Tbsp plus 1 tsp cinnamon
- 2 tsp allspice
- 1 tsp ginger
Directions
- Mix all-bran cereal and water let cool
- Add buttermilk bran flakes raisins vegetable oil white sugar and brown sugar substitute
- Fold in eggs one at a time flour baking soda salt cinnamon allspice and ginger
- Fill muffin pans 34 full and bake at 375 for 20 to 25 minutes
