Welsh Cookies

Ingredients

  • 1 c butter or margarine
  • 1 c lard
  • 2 c sugar
  • 3 eggs beaten
  • 14 c milk
  • 7 12 c flour
  • 2 tsp lemon extract
  • 1 tsp salt
  • 2 tsp nutmeg
  • 1 tsp cream of tartar
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 lb currants plumped with hot water and drained

Directions

  1. Cream shortening
  2. Add sugar and cream well
  3. Add beaten eggs and milk
  4. Sift dry ingredients and add to mixture
  5. Stir in currants
  6. Roll on lightly floured board to 14-inch thickness Cut with cookie cutter or biscuit cutter
  7. Bake on ungreased griddle
  8. Turn when brown
  9. Turn only once
  10. Using electric frypan set at 300 fry for 5 minutes on each side
