West African Groundnut Stew

Ingredients

  • 3 Tbsp oil
  • 12 tsp nutmeg
  • 1 Tbsp chili powder
  • 1 clove garlic minced
  • 6 c water
  • 12 c chunky peanut butter
  • 2 lb beef cubes 1-inch or smaller rolled in flour
  • 4 medium onions sliced
  • 34 c tomato paste
  • red pepper if desired
  • 2 Tbsp oil

Directions

  1. In large heavy kettle heat oil add meat
  2. When meat is browned add onion garlic nutmeg chili powder sliced onion tomato paste water and red pepper
  3. Simmer until meat is tender A half hour before serving heat peanut butter and oil in small saucepan
  4. Stir over medium heat 5 minutes
  5. Add beef stew and simmer over low heat 20 minutes
  6. Serve over rice
