West African Groundnut Stew

Ingredients
- 3 Tbsp oil
- 12 tsp nutmeg
- 1 Tbsp chili powder
- 1 clove garlic minced
- 6 c water
- 12 c chunky peanut butter
- 2 lb beef cubes 1-inch or smaller rolled in flour
- 4 medium onions sliced
- 34 c tomato paste
- red pepper if desired
- 2 Tbsp oil
Directions
- In large heavy kettle heat oil add meat
- When meat is browned add onion garlic nutmeg chili powder sliced onion tomato paste water and red pepper
- Simmer until meat is tender A half hour before serving heat peanut butter and oil in small saucepan
- Stir over medium heat 5 minutes
- Add beef stew and simmer over low heat 20 minutes
- Serve over rice
