Whipped Sweet Potato With Yogurt And Chives
Ingredients
- 2 large sweet potatoes 2 lb baked and peeled
- 2 eggs beaten or 12 c prepared egg substitute
- 13 c plain yogurt
- 1 Tbsp each minced chives and minced fresh flat leaf parsley
- salt and pepper to taste
Directions
- Preheat oven to 350
- Mash sweet potatoes
- Blend in the eggs add yogurt and whip with a hand-held mixer until potatoes are fluffy
- Add more yogurt if needed
- Stir in the chives parsley salt and pepper
- Bake for 30 minutes or until lightly browned on the top
