White Bean Soup

Ingredients

  • 2 lb white beans
  • about 2 lb lean salt meat
  • water
  • seasonings onion and garlic only
  • about 14 c oil

Directions

  1. Wash white beans and soak overnight
  2. Use lean salt meat wash and cut only do not boil
  3. Add water to cover about three inches over beans and meat in pot
  4. Boil together and remove bubbles that form over top of beans as they begin to boil until there are none left
  5. Add seasonings onion and garlic only and oil
  6. Cook until beans are tender
  7. The length of time depends on if they are new crop beans or if they are old
  8. New crop beans are in September and they remain tender until December
  9. Beans can be bought in September and frozen for later use
