White Christmas Cake

Ingredients

  • 1 12 c margarine or butter
  • 4 oz white chocolate baking bar chopped
  • 1 12 c buttermilk
  • 4 eggs slightly beaten
  • 14 tsp rum extract
  • 3 12 c all-purpose flour
  • 1 c toasted chopped pecans
  • 2 14 c sugar
  • 12 c flaked coconut
  • 1 tsp baking soda
  • 1 tsp baking powder

Directions

  1. In a large saucepan bring margarine or butter and 34 cup water to boiling stirring constantly
  2. Remove from heat
  3. Add baking bar stir until melted
  4. Stir in buttermilk eggs and rum extract set aside
  5. Sir together 12 cup of the flour and the pecans set aside
  6. In an extra bowl stir together remaining 3 cups flour sugar coconut soda and powder
  7. Stir in margarine mixture
  8. Fold in coconut mixture
  9. Stir in margarine mixture Fold in pecan mixture
