White Christmas Cake
Ingredients
- 1 12 c margarine or butter
- 4 oz white chocolate baking bar chopped
- 1 12 c buttermilk
- 4 eggs slightly beaten
- 14 tsp rum extract
- 3 12 c all-purpose flour
- 1 c toasted chopped pecans
- 2 14 c sugar
- 12 c flaked coconut
- 1 tsp baking soda
- 1 tsp baking powder
Directions
- In a large saucepan bring margarine or butter and 34 cup water to boiling stirring constantly
- Remove from heat
- Add baking bar stir until melted
- Stir in buttermilk eggs and rum extract set aside
- Sir together 12 cup of the flour and the pecans set aside
- In an extra bowl stir together remaining 3 cups flour sugar coconut soda and powder
- Stir in margarine mixture
- Fold in coconut mixture
- Stir in margarine mixture Fold in pecan mixture
