White Conch Chowder

Ingredients

  • 2 large conch mantle included pounded
  • 2 slices bacon chopped
  • 2 onions chopped
  • 2 garlic cloves chopped
  • 2 potatoes chopped
  • 2 carrots sliced
  • 3 c water
  • 3 chicken bouillon cubes
  • pinch cayenne pepper
  • pinch rosemary
  • 2 Tbsp parsley
  • 1 can 6 oz evaporated milk
  • salt and pepper to taste

Directions

  1. Pound and dice conch
  2. Fry bacon saute onions add conch and all other ingredients except the milk
  3. Simmer for one hour add milk and heat
