White Fruit Cake

Ingredients

  • 1 c butter
  • 1 c white sugar
  • 5 eggs
  • 2 Tbsp vanilla
  • 2 Tbsp lemon extract
  • 1 34 c flour
  • 12 tsp baking powder
  • 4 c coarsely chopped pecans
  • 34 lb candied cherries chopped
  • 1 lb candied pineapple chopped

Directions

  1. Cream the butter and sugar until light and fluffy Add eggs one at a time beating thoroughly after each addition
  2. Mix in flavorings
  3. Add flour and baking powder
  4. Beat until blended Fold in pecans and fruits
  5. Turn into a 10-inch tube pan lined with greased waxed paper
  6. Bake at 250 for 3 hours
  7. Cool
  8. Keep refrigerated or can be frozen
