White Fruit Cake
Ingredients
- 1 c butter
- 1 c white sugar
- 5 eggs
- 2 Tbsp vanilla
- 2 Tbsp lemon extract
- 1 34 c flour
- 12 tsp baking powder
- 4 c coarsely chopped pecans
- 34 lb candied cherries chopped
- 1 lb candied pineapple chopped
Directions
- Cream the butter and sugar until light and fluffy Add eggs one at a time beating thoroughly after each addition
- Mix in flavorings
- Add flour and baking powder
- Beat until blended Fold in pecans and fruits
- Turn into a 10-inch tube pan lined with greased waxed paper
- Bake at 250 for 3 hours
- Cool
- Keep refrigerated or can be frozen
