White Fruit Cake

Ingredients

  • 5 large eggs
  • 12 lb butter
  • 1 c sugar
  • 1 34 c all-purpose flour
  • 12 tsp baking powder
  • 34 lb candied cherries
  • 1 lb candied pineapple
  • 4 c shelled pecans
  • 12 oz vanilla extract
  • 12 oz lemon extract
  • 1 small pkg almond slices
  • 12 c raisins

Directions

  1. Cream butter and sugar until fluffy
  2. Add well beaten eggs and blend well
  3. Chop nuts and fruit in medium size pieces
  4. Mix with some flour
  5. Sift remaining flour and baking powder together and fold into the butter and egg mixture
  6. Add flavorings mix well Add fruit and nuts mix well
  7. Pour into greased paper lined tube pan
  8. Place in cold oven and bake at 250 for 3 hours
  9. Cool in pan on rack
