White Fruit CakeFrom Old Fashioned Cooking Canaan Community Cookbook

Ingredients

  • 2 c white sugar
  • 1 c butter
  • 12 lb candied pineapple
  • 2 tsp baking powder
  • 1 lb white raisins
  • 12 lb coconut
  • 4 eggs
  • 3 c flour
  • 1 c milk
  • 12 lb pecans
  • 1 tsp vanilla or almond flavoring
  • 12 lb red and green candied cherries

Directions

  1. Cream sugar and butter
  2. Beat in eggs
  3. Sift flour and baking powder together
  4. Add flour alternately with milk and vanilla Stir in other ingredients
  5. Bake 3 hours at 250 in a tube pan Put water in oven in a pan under cake
  6. This fruit cake is very moist
  7. Let cool completely before removing from pan
