Whitefish Almondine

Ingredients

  • 2 lb whitefish fillets
  • 3 Tbsp lemon juice
  • 13 c regular all-purpose flour
  • 2 tsp seasoned salt
  • dash of seasoned pepper
  • 14 c butter or margarine
  • 12 c blanched slivered almonds
  • 2 Tbsp chopped parsley
  • lemon wedges

Directions

  1. Cut fillets into serving size pieces
  2. Sprinkle all sides with lemon juice
  3. Combine flour salt and pepper
  4. Use to coat fish
  5. In large skillet over medium heat in hot butter or margarine fry fish pieces until brown about 10 minutes turning once
  6. Place fish on warm platter keep warm
