Whole-Wheat Apple Cinnamon Muffins
Ingredients
- 1 12 c flour
- 12 c whole wheat flour
- 1 tsp baking powder
- 12 tsp baking soda
- 12 tsp salt
- 1 tsp cinnamon
- 1 apple
- 1 c plain yogurt
- 14 c dark brown sugar
- 1 egg
- 2 Tbsp molasses
- 2 Tbsp oil
Directions
- In a mixing bowl combine the first 6 ingredients
- Peel the apple and grate it into another bowl
- Stir in the yogurt and the sugar until the sugar dissolves
- Stir in the egg molasses oil and 14 cup water
- Stir the flour mixture into the yogurt mixture until just combined
- The muffin batter will be lumpy
- Spoon into prepared muffin pans
- Bake at 400 until edges start to brown about 15 to 20 minutes
- Make ahead and freeze
- Great for breakfast
