Whole-Wheat Apple Cinnamon Muffins

Ingredients

  • 1 12 c flour
  • 12 c whole wheat flour
  • 1 tsp baking powder
  • 12 tsp baking soda
  • 12 tsp salt
  • 1 tsp cinnamon
  • 1 apple
  • 1 c plain yogurt
  • 14 c dark brown sugar
  • 1 egg
  • 2 Tbsp molasses
  • 2 Tbsp oil

Directions

  1. In a mixing bowl combine the first 6 ingredients
  2. Peel the apple and grate it into another bowl
  3. Stir in the yogurt and the sugar until the sugar dissolves
  4. Stir in the egg molasses oil and 14 cup water
  5. Stir the flour mixture into the yogurt mixture until just combined
  6. The muffin batter will be lumpy
  7. Spoon into prepared muffin pans
  8. Bake at 400 until edges start to brown about 15 to 20 minutes
  9. Make ahead and freeze
  10. Great for breakfast
