Whole Wheat Cottage Cheese Rolls

Ingredients

  • 2 c whole wheat flour
  • 1 34 c white flour unbleached
  • 2 pkg active dry yeast
  • 12 tsp baking soda
  • 1 12 c cream-style cottage cheese
  • 12 c water
  • 14 c packed brown sugar
  • 2 Tbsp margarine or oil
  • 2 tsp salt
  • 2 eggs

Directions

  1. Thoroughly stir together 1 12 cups flour salt yeast and soda
  2. Heat together cottage cheese water sugar and butter or oil and cook just until warm stirring constantly to melt oil or margarine
  3. Add to dry mixture add eggs
  4. Beat at low speed or by hand for 3 minutes or enough to make a stiff dough
  5. On floured surface knead until smooth 8 to 10 minutes
