Wiener Schnitzel

Ingredients
- 4 well-beaten veal cutlets
- 4 slices Gruyere cheese
- 13 c butter
- 1 tsp grated cheese
- bread crumbs
- lemon juice
- salt and pepper
- flour
- 1 beaten egg
Directions
- Sprinkle veal with lemon juice salt pepper and grated cheese
- Let sit for 5 minutes
- Then roll in flour egg and breadcrumbs
- Fry on one side in hot butter
- Turn
- Reduce heat Place cheese slice on each cutlet
- Slowly fry other side
- Serve with crisp salad
