Wild Plum Jelly

Ingredients

  • 5 lb wild plums halved and pitted
  • 4 c water
  • 1 1 34 oz pkg powdered fruit pectin
  • 7 12 c sugar

Directions

  1. In a large kettle simmer plums and water until tender about 30 minutes
  2. Pour through a damp jelly bag allowing juice to drip into a bowl
  3. Measure 5 12 cups of juice return to the kettle Add pectin stir and bring to a boil
  4. Add sugar bring to a full rolling boil
  5. Boil for 1 minute stirring constantly
  6. Remove from heat
  7. Skim off any foam
  8. Pour hot into hot jars leaving 14-inch headspace
  9. Adjust caps
  10. Process for 5 minutes in a boiling water bath
  11. Yield about 8 half pints
