WilmaS Salmon Cakes

Ingredients

  • 1 can pink salmon
  • 1 small onion chopped
  • chopped green pepper optional
  • 2 Tbsp fresh chopped basil
  • 1 tsp thyme
  • 1 egg beaten or 14 c Egg Beaters
  • salt and pepper to taste
  • 3 Tbsp flour slightly more if needed to hold patties together
  • cracker crumbs optional
  • 8 or 9 crushed crackers to roll patties in

Directions

  1. Mix salmon onion green pepper if desired basil thyme salt pepper egg flour and cracker crumbs if desired
  2. Form patties and roll in additional cracker crumbs
  3. Fry in small amount of Crisco
  4. Makes 5 to 6 patties
