Wilted Watercress And Tomatoes

Ingredients
- vegetable cooking spray
- 1 tsp olive oil
- 2 c torn fresh watercress
- 1 c torn arugula
- 2 medium tomatoes seeded and coarsely chopped
- 1 Tbsp lemon juice
- 14 tsp pepper
Directions
- Coat a nonstick skillet with cooking spray add oil Place over medium high heat until hot Add watercress and arugula Saute until wilted Add tomatoes cook until thoroughly heated Sprinkle with lemon juice Yields 4 servings 46 calories and 37 fat per serving
