Winter Squash Muffins
Ingredients
- 1 c all-purpose flour
- 1 c whole wheat flour
- 14 c corn meal or wheat germ
- 4 tsp baking powder
- 14 tsp salt
- 2 Tbsp sugar
- 1 tsp cinnamon
- 14 tsp nutmeg
- 1 c cooked mashed winter squash or pumpkin
- 2 Tbsp corn oil or vegetable oil
- 1 egg
- 1 c low-fat milk
- 12 c chopped walnuts
- 12 c raisins or dried currants
Directions
- Preheat oven to 400
- Grease muffin tins with a small amount of oil or use paper liners
- Measure and sift flours baking powder salt sugar and spices into a large bowl
- Stir in corn meal or wheat germ
