Winter Strawberry Muffins
Ingredients
- 1 34 c flour
- 1 Tbsp baking powder
- 12 tsp salt
- 34 c sugar
- 12 c chopped pecans
- 2 eggs
- 12 c vegetable oil
- 10 oz pkg frozen strawberries
Directions
- Thaw strawberries
- Sift dry ingredients together in a large bowl
- Stir in pecans
- In a separate bowl whisk together eggs oil and strawberries
- Stir into dry ingredients
- Mix lightly Spoon into greased muffin tin
- Bake in preheated oven for 20 to 25 minutes at 400
- Yields 2 dozen
