Wisconsin Potato Cheese Soup

Ingredients

  • 2 Tbsp butter or margarine
  • 13 c chopped celery
  • 13 c chopped onion
  • 4 c diced peeled potatoes
  • 3 c chicken broth
  • 2 c milk
  • 14 tsp pepper
  • 1 12 tsp salt
  • dash of paprika
  • 2 c 8 oz shredded Cheddar cheese
  • croutons
  • fresh chopped parsley

Directions

  1. In a large saucepan melt butter over medium-high heat
  2. Saute celery and onion until tender
  3. Add potatoes and broth
  4. Cover and simmer until potatoes are tender
  5. In batches puree potato mixture in a blender or food processor
  6. Return to saucepan
  7. Stir in milk and seasonings
  8. Add the cheese and heat only until melted
  9. Garnish with croutons and parsley
  10. Makes 8 servings
