Yam Sweet Bread

Ingredients

• 3 c mashed yams
• 1 14 c sugar
• 13 c salad oil
• 2 eggs
• 1 34 c all-purpose flour
• 2 tsp baking powder
• 12 tsp cinnamon
• 34 tsp salt
• 14 tsp nutmeg
• 12 c chopped pecans
• 1 c raisins

Directions

1. In a large bowl add to the mashed yams the sugar oil and eggs
2. Mix until smooth
3. In another bowl sift together the flour baking powder salt and spices
4. Add the raisins and nuts to coat them
5. Stir dry ingredients into the yam mixture
