Yankee Doodle Macaroni
Ingredients
- 3 Tbsp shortening
- 2 c onion finely chopped
- 2 cloves garlic crushed
- 12 c mushrooms sliced
- 1 lb ground beef
- 1 1 lb 3 oz can peeled tomatoes
- 1 Tbsp parsley chopped
- 7 to 8 oz pkg macaroni
- 1 to 2 Tbsp margarine
- grated Parmesan or sharp Cheddar cheese
Directions
- Heat shortening in pan
- Add onion garlic and mushrooms saute until onion becomes pale yellow
- Add meat stir until brown
- Add tomatoes parsley and seasonings
- Cover
- Simmer about 45 minutes
- While meat is cooking cook macaroni in boiling water 7 to 10 minutes
- Drain well
- Toss in margarine
- Turn macaroni onto hot platter
- Pour sauce over sprinkle with grated cheese
