Yellow Squash Casserole
Ingredients
- 2 to 3 lb yellow squash
- 1 stick butter
- 1 small finely chopped onion
- 1 garlic button
- salt and pepper to taste
- 1 c milk
- 2 whole eggs beaten
- 2 Tbsp sugar
- 20 Club or Ritz crackers
Directions
- Wash and slice squash cook in salted water until tender
- Do not overcook
- Saute onion and garlic in butter and add to drained squash
- Add 23 cup butter sugar salt and pepper to squash mixture
- Mix well
- Add milk 2 eggs and cracker crumbs Mix gently
- Pour into buttered casserole dish
- Dot top with remaining 13 cup butter and crushed crackers
- Bake in a 350 oven for 40 minutes or until browned
