Yellow Squash Casserole

Ingredients

  • 2 to 3 lb yellow squash
  • 1 stick butter
  • 1 small finely chopped onion
  • 1 garlic button
  • salt and pepper to taste
  • 1 c milk
  • 2 whole eggs beaten
  • 2 Tbsp sugar
  • 20 Club or Ritz crackers

Directions

  1. Wash and slice squash cook in salted water until tender
  2. Do not overcook
  3. Saute onion and garlic in butter and add to drained squash
  4. Add 23 cup butter sugar salt and pepper to squash mixture
  5. Mix well
  6. Add milk 2 eggs and cracker crumbs Mix gently
  7. Pour into buttered casserole dish
  8. Dot top with remaining 13 cup butter and crushed crackers
  9. Bake in a 350 oven for 40 minutes or until browned
