Yellow Squash Casserole
Ingredients
- 4 c cooked drained and mashed yellow squash
- 1 medium onion diced fine
- 12 green pepper diced fine
- 14 c chopped pimento
- 1 stick butter 14 lb melted
- 1 c sour cream
- 1 10 34 oz can cream of celery soup
- 3 c herb seasoned stuffing mix
- salt and pepper
- 12 c grated Parmesan cheese
- paprika
Directions
- Mix all ingredients except cheese and paprika
- Place in buttered casserole dish
- Top with grated cheese and sprinkle with paprika
- Bake 25 minutes in 350 oven until bubbly
- Serves 8 to 10
