Yogurt Coffee Cake

Ingredients
- 1/2 c. butter or margarine, softened
- 1/2 c. packed light brown sugar
- 1 egg
- 1 tsp. vanilla
- 2 c. flour (whole wheat gives better flavor and texture)
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 c. fruit flavored yogurt
Directions
- Cream butter and brown sugar.
- Add egg and vanilla; beat until fluffy.
- Stir together flour, baking soda and salt.
- Add to creamed mixture alternately with yogurt.
- Blend well.
- Turn into a greased 9-inch square cake pan.
- The top can be sprinkled with chopped nuts if desired.
- Bake in a 350° oven for about 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
