Zesty Carrots

Ingredients

  • 6 large carrots about 1 14 lb
  • 2 Tbsp onion finely chopped
  • 2 Tbsp prepared horseradish
  • 12 c mayonnaise
  • salt and pepper
  • 14 c bread crumbs
  • 2 Tbsp butter melted

Directions

  1. Cut carrots julienne style
  2. Cook until tender about 6 to 8 minutes
  3. Drain carrots reserving 14 cup liquid
  4. Turn carrots into a 1 12-quart baking dish
  5. In small bowl combine onion horseradish mayonnaise reserved liquid from carrots and salt and pepper to taste
  6. Pour over carrots spreading evenly
  7. Toss bread crumbs with butter sprinkle over top
  8. Bake 15 minutes at 375 Makes 6 servings
