Zesty Carrots
Ingredients
- 6 large carrots about 1 14 lb
- 2 Tbsp onion finely chopped
- 2 Tbsp prepared horseradish
- 12 c mayonnaise
- salt and pepper
- 14 c bread crumbs
- 2 Tbsp butter melted
Directions
- Cut carrots julienne style
- Cook until tender about 6 to 8 minutes
- Drain carrots reserving 14 cup liquid
- Turn carrots into a 1 12-quart baking dish
- In small bowl combine onion horseradish mayonnaise reserved liquid from carrots and salt and pepper to taste
- Pour over carrots spreading evenly
- Toss bread crumbs with butter sprinkle over top
- Bake 15 minutes at 375 Makes 6 servings
