8 to 10 squash yellow or zucchini or mixed sliced or cubed
1 lb mild Cheddar cheese grated
1 can Ro-Tel tomatoes
bread crumbs Italian
butter or margarine
Directions
Mix cut squash Ro-Tel tomatoes do not drain and 1 12 to 2 cups water in a large pot Stew on medium heat for about 20 minutes or until squash is tender
Preheat oven to 350
In a baking dish spoon in layer of squash mixture dob with butter sprinkle with handful of bread crumbs and layer of cheese Continue layering until all mixture is used Bake at 350 for 20 to 25 minutes
