Zucchini-Carrot Bread
Ingredients
- 3 eggs
- 12 c salad oil
- 12 c brown sugar packed
- 12 c white sugar
- 1 c carrots grated medium
- 1 c zucchini grated medium and drained
- 2 tsp vanilla
- 2 12 c flour
- 12 c bran cereal
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 3 tsp cinnamon
- 1 c chopped nuts optional
- 1 c raisins
Directions
- Preheat oven to 350
- Grease pans three 5 12 x 9 12 x 3-inch if double
- In large bowl beat eggs with oil
- Stir in sugar zucchini carrots and vanilla
- Mix flour baking soda baking powder salt and cinnamon
- Blend into egg and oil etc and add raisins
- Bake 1 hour or until tested with toothpick Remove from pan and cool
