Zucchini-Carrot Bread

Ingredients

  • 3 eggs
  • 12 c salad oil
  • 12 c brown sugar packed
  • 12 c white sugar
  • 1 c carrots grated medium
  • 1 c zucchini grated medium and drained
  • 2 tsp vanilla
  • 2 12 c flour
  • 12 c bran cereal
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1 c chopped nuts optional
  • 1 c raisins

Directions

  1. Preheat oven to 350
  2. Grease pans three 5 12 x 9 12 x 3-inch if double
  3. In large bowl beat eggs with oil
  4. Stir in sugar zucchini carrots and vanilla
  5. Mix flour baking soda baking powder salt and cinnamon
  6. Blend into egg and oil etc and add raisins
  7. Bake 1 hour or until tested with toothpick Remove from pan and cool
